Prominent bouquet of aromas that extends from ammonia, fresh yeast and sour cream to biscuit and toasted white bread. There are also playful hints of fried onion. A coherent ensemble of cream, buttermilk, yeast, vanilla pod and boiled potato unfolds on the palate. It is repeatedly interspersed with salty and milky moments that contrast with cheeky ammonia notes. The cheese is creamy and smooth on the palate, suffused with an almost silky fragility that flows beautifully on the tongue.
